The spring ensures the return of the lever on the soda siphon or cream whipper to its original position. On the soda siphon, the spring is held in place by the clamping screw, while on the cream whipper it is riveted to the lever (for old type heads) or secured by the clamping screw (for new type heads).

In the event of an O-ring failure, water or whipped cream may enter the spring housing and cause the spring to corrode. A severely corroded spring should be replaced, other than that, replacement is not usually necessary.
